This iced coffee is a vegan-friendly way to cool off thanks to the use of coconut milk and maple syrup as the sweetener. Note that some brands of coconut milk are thicker than others, so they may require more vigorous stirring before adding the ice and coffee.
1/2 cup (4 ounces) coconut milk, preferably chilled
1 tablespoon maple syrup
1 teaspoon cocoa powder
Pinch fine sea salt
1 cup ice
¾ cup (6 ounces) brewed coffee, chilled

- Put the coconut milk, maple syrup, cocoa powder, and salt in a tall glass (at least 16 ounces in capacity). Stir well with a fork to fully combine.
- Add the ice and then add the chilled coffee. (Alternatively, using the OVER ICE program, brew 6 ounces of coffee directly into the glass with the other ingredients.)
- Serve immediately.
