Sweet Potato Bake

Ingredients

Vegetable oil cooking spray 1 medium onion, peeled, ends cut flat 2 tablespoons butter 2 medium sweet potatoes (about 12 ounces), peeled, cut to fit feed tube vertically ¾ cup half and half 2 large eggs ⅛ teaspoon ground allspice ⅛ teaspoon ground nutmeg ⅛ teaspoon ground white pepper

Instructions

Place baking rack in Cuisinart® Toaster Oven Broiler in position B and preheat oven to 350°F. on the Bake setting. Lightly coat a 9-inch pie pan with vegetable oil cooking spray. In a Cuisinart® food processor fitted with the 2mm slicing disc slice onion. Melt butter in a Cuisinart® Non-Stick Stainless 2-quart Saucier over medium heat. Add onion slices and sauté until soft and golden brown, about 5 minutes. Remove from heat. Slice sweet potatoes using the 2mm slicing disc and leave in work bowl. Insert the metal blade and process half and half, eggs and spices until combined, about 10 - 15 seconds. Arrange sweet potato slices in concentric circles around pan, making about 3 layers. Arrange sautéed onions over potato slices. Pour half and half mixture over onions and bake until top is golden brown and egg mixture is set, about 30 minutes.
