It is convenient to have this frozen in the freezer in small containers so that it is quickly thawed to be used in latin/spanish recipes.
2 Tbl. olive oil
1½ cups diced white onions
1 cup diced green pepper
½ cup diced red pepper
4 cloves minced garlic
1 can 8 oz. diced or crushed tomato
2 bunches of finely chopped cilantro
1 Tbl. oregano
2 ts. salt
1 ts. black pepper
½ ts. red pepper

Saute onions, peppers & garlic i olive oil until transparent. Place with tomatoes and cilantro into a blender or food processor. Puree so that no chunks remain. Thoroughly mix in remaining seasonings. Retain the amount you will use within 2 weeks in an airtight container, anything more should be frozen.
