A tangy twist on a healthy, refreshing cold summer soup!


6 ripe tomatoes
1 green bell pepper
1 red pepper
1 orange or yellow pepper (for color)
2 cucumbers, peeled
1 clove of garlic, finely minced
1/2 small red or white onion
4 slices of crusty light bread (white, or sourdough is best), soaked in water
1/2 cup sherry vinegar
8 oz. tomato juice
Salt & Pepper to taste
Dash of olive oil
Dollop of sour cream and a spring of cilantro as a garnish (optional)

In your Cuisinart Elite Collection™ 12-Cup Food Processor, chop your tomatoes, peppers, onion, and cucumbers into small pieces. Place in a bowl and set aside.

Then, in either your same food processor, or your Cuisinart Blend and Cook Soup Maker™, blend your tomato juice, sherry vinegar, garlic, salt, pepper, olive oil, and bread.

Put everything back in your Food Processor briefly to mix the flavors, while maintaining the texture. Pour into a large bowl, and chill in your refrigerator for several hours or even overnight. Serve cold with a small dollop of light sour cream and a spring of cilantro for garnish (optional).
