Veloute of Sweet Pea with a coconutUser Submitted Recipe
700ml Vegetable stock
200ml coconut cream
600g fresh peas
150g leek, chopped
Melt the butter, sweat off onion and celery. Add the stock and coconut milk, bring to boil and simmer for 15min. Add the peas and leek. Simmer for 5min. liquidize and pass through a sieve. Season to taste.
