Easy Weeknight Chili


.5 to 1 lb ground hamburger, chicken, or turkey (optional)
1 clove garlic, minced (if using turkey)
1 can black beans, rinsed
1 can dark red kidney beans, rinsed
1 can fat-free refried beans
1/2 green or red sweet pepper, chopped
1/2 onion, chopped
2 14.5-oz cans diced tomatoes (seasoned if desired)
Seasonings to taste:
salt, pepper, chili powder, cumin


Saute meat in short stock pot. Once it has started to cook, add garlic. Once cooked through, drain any excess fat and set meat aside.
Sweat onion and sweet pepper in stock pot until onion is translucent. Return meat to stockpot and add ~1tsp of cumin ~1tsp of chili powder (more if you like spicy chili), 1tsp salt, and 1/4 tsp pepper. Add all beans and stir until refried beans start to heat through. Add tomatoes and stir. Let heat through at least 10 minutes, stirring occasionally.

*Serve with cornbread or rice.
*Top with cheese, sour cream, guacamole, onions, any toppings you enjoy on chili.
*May make vegetarian by omitting meat and adding additional beans if desired (black eyed peas work well).
*Can use chili-ready seasoned tomatoes and omit cumin/chili powder for mild chili
