Delicious toasted wheat germ, garlic and onions give this soup a special taste. Everyone asks me to make this over and over. It has a unique taste that will make you crave more. "


1 cup vegetable stock or water
1 cup dried lentils
1 teaspoon salt
1/4 cup olive oil
2 cups chopped onions
3 cloves garlic pressed
1/2 cup raw bulgur
(small grain)
1/4 teaspoon cayenne pepper
2 cans diced tomatoes
1 can tomato sauce
1 package frozen chopped spinach or fresh.
Salt & pepper to taste


In a 5 qt. soup pot add:
1 cup dried lentils
with vegetable stock or water and salt. Cook lentils for 40 minutes on medium until tender.
In a separate frying pan, Saute onion, garlic and bulgur in olive oil until bulgur is browned and onions are tender. Season with cayenne pepper.
When lentils are tender, pour bulgur mixture into soup pot and add your tomatoes, spinach, salt & pepper. Simmer for 15 minutes until spinach is wilted.
