This sweet and citrus side dish goes with any meal and a favorite for kids!
2 medium sized sweet potatoes
1 cup baby carrots sliced in half
1 tsp. cornstarch
2 tbsp. honey
4 tbsp. brown sugar
1/4 cup orange juice or pineapple juice

Peel and cut sweet potatoes into 4's. Boil until tender.
Boil baby carrots until tender.
In a separate saucepan, pour orange juice over low heat, mix in honey,brown sugar and cornstarch until thickened.
Pour boiled sweet potatoes in a greased dish along with boiled carrots. Pour sauce over vegetables. Cut one orange into slices with or without peel and pour on top. Bake at 350F for 25 mins.
OPTIONAL: add 1/2 cup raisins
