2 tablespoons olive oil
1 cup onion chopped
½ cup walnuts chopped
1 cup carrot chopped
1 tsp. salt
2 Tbs. curry powder
¼ tsp. cayenne pepper
½ tsp. cinnamon
1 can low sodium garbanzo beans, drained
1 15 oz can no sodium added tomato sauce
½ cup raisins
1 1/2 cup water
2 cups whole wheat couscous
3 cups chicken stock

Heat oil in medium saucepan. Add onion and sauté 3 minutes until translucent.
Add walnuts and sauté additional 1-2 minutes until nuts being to brown.
Add all other ingredients except couscous and chicken stock. Cover and bring to a boil. Simmer about 10 minutes until carrots are soft.
Meanwhile, bring 3 cups chicken stock to a boil. Stir in 2 cups couscous and cover. Remove from heat and let sit 5 minutes
Serve sauce over prepared couscous.
