This recipe is at least 60 years old and Mom is famous for her baked beans. A few modifications have been made over the years to reflect new technology like slow cookers, but the original recipe called for baking for 8 hours in a slow oven. Prepare to be asked for the recipe!
1 pound dried Great Northern Beans
½ teaspoon baking soda
½ pound bacon, cut in small pieces
½ cup chopped onion
2 teaspoon vinegar
½ teaspoon prepared mustard
½ cup white sugar
¾ cup packed brown sugar
2 Tbsp catsup or BBQ sauce
2 Tbsp molasses

Rinse and cover dried beans with at least 2 inches of cold water; add baking soda and soak for several hours. Or cover beans with water, add the soda and bring almost to a boil. Turn off the heat and let them sit for a couple of hours.
In the meantime, saute the bacon just enough to render off some of the fat.
Drain the beans and pour into a slow cooker. Add bacon and the rest of the ingredients and mix well. Add water to cover by ½ - 1 inch. Cook on high for approximately 7 - 8 hours (it will depend on your slow cooker). Check once or twice to see if they need a bit more water. I put mine on before I go to bed and the next morning they are done.
