A delicious lower in calorie potato salad with egg. It has been a family favorite for 4 generations.
6 eggs, hard cooked, peeled and chopped
6 large red potatoes, cooked with skins on
1 large vidalia onion, chopped
1 cup low fat or fat free mayonnaise
1 cup low fat or nonfat sour cream
3 tablespoons apple cider vinegar
¼ cup sugar
2 tablespoons yellow mustard
salt and pepper to taste

Place eggs and scrubbed potatoes in a large saucepan, cover with water and cook until potatoes are tender. Cool eggs and potatoes and removed potato skins when potatoes are cool enough to handle. Let sit while eggs are peeled and place chopped eggs into a large mixing bowl. Cube potatoes and place in bowl. Add chopped onion. In small bowl combine mayo, sour cream, vinegar, sugar, and mustard. Combine well and taste for seasoning. Pour potatoes and mix well. Refrigerate until well chilled.
