This Potato salad is NOT for the meek. Paula Dean would be proud. It is served hot but can also be served cold.
Ingredients
5 lbs Red Skin Potatos
18 Eggs
2 lbs Bacon
2 bunches spring onions
1½ cups mayo
salt & papper
3 tbs minced garlic
2 sticks butter
1 teaspoon oragano

Instructions
Dice potatos into about ½ inch pieces, place on baking tray, add slices of butter ( use both sticks) add garlic, salt & Pepper & oragano, slice the green onions place the chives with the potatoes rerserve the white slices for later.
Place potatoes into a pre heated oven at 350 degrees for about 40 mins or until tender, then turn on broiler until the edges get a little crispy.
Cut bacon into 1 inch pieces and fry until crispy, set aside. Hard boil eggs, unshell and slice into 4 pieces.
When potato's are done remove and place ina a large bowl, add bacon, spring onion whites, gently mix, fold in mayo ( it will melt) you may have to add a tad more just to keep the potatoes where they sorta hold together but fall. You don't want it mayoezze fold int eggs, Salt and pepper, Serve
