CJ's Super Spinach Pie

This is a "crustless pie" similar to a quiche. Great for all occassions - breakfast, brunch, or side. Very easy to make.




12 oz Fresh Baby Spinach ¼ cupButter 3 tablespoon AP Flour ¼ teaspoonSalt ¼ teaspoonpepper ¼ teaspoongarlic salt 4 eachEggs – slightly beaten or Egg Substitue ¾ cupWhipping Cream or ¼ cup lite mayo & ½ cup yogurt ½ cupParmesan Cheese

Rinse spinach well and drain. Saute over medium heat with ¼ cup butter until just wilted. Combine flour, salt, pepper and garlic powder in large bowl. Add spinach, cream, eggs and Parmesan cheese, stirring well. Pour into greased 9-inch pie pan. Bake at 350 for25 minutes or until pie is set. Let stand for 10 minutes.
