This is a "crustless pie" similar to a quiche. Great for all occassions - breakfast, brunch, or side. Very easy to make.
12 oz Fresh Baby Spinach
3 tablespoon AP Flour
¼ teaspoongarlic salt
4 eachEggs – slightly beaten or Egg Substitue
¾ cupWhipping Cream or ¼ cup lite mayo & ½ cup yogurt
½ cupParmesan Cheese

Rinse spinach well and drain. Saute over medium heat with ¼ cup butter until just wilted.
Combine flour, salt, pepper and garlic powder in large bowl. Add spinach, cream, eggs and Parmesan cheese, stirring well.
Pour into greased 9-inch pie pan.
Bake at 350 for25 minutes or until pie is set. Let stand for 10 minutes.
