6-8 Medium sized potatoes peeled, cooked and mashed (like regular mashed potatoes)Or you can use instant mashed potaotes and even better yet leftover mashed potatoes 8 - Slices of american Cheese (any brand) 1 - Jar of Frenchs Fried Cheddar Onions

In a 6X8 casserole dish spoon half of the mashed potatoes into dish and top with 4 slices of american cheese. Spoon the remaining mashed potaotes and top with the 4 remaining slices of cheese. Pour jar of Frenchs fried cheddar onions on top of the cheese slices. Bake in a 350° oven until cheese is melted and the onions are a golden brown.
