This is a delicious colorful salad..a nice break from using designer greens.

Ingredients
1 lb. bok choy (4-6 stalks)
2-3 green apples, peeled
3 large carrots, peeled
1 T. fresh ginger, peeled and grated
1 T. sugar/Splenda

Instructions
Split the stalks of bok choy and then slice slaw like using the Cuisinart. The apples are julienned using the julienne blade. Failing to have that, just use a knife and make apple matchsticks. If this process is going to take a long time place the apples in water and lemon juice to prevent discoloration. The carrots can also be julienned or just shredded.
Place the ingredients in a bowl, and add the ginger and sugar. Toss.
