This is just how my Mum used to make the best out of not having a lot to work with. This makes a great side dish."


1 lb. Potatoes
1 lb. Cabbage
4 Tbs. Butter
1 lg Onion
1 Tbs. chives
3/4 c. grated sharp Cheese
Salt & Pepper to taste


Cook and mash the potatoes. I like it with the skins. Chop and cook cabbage quickly (sauté or steam). Melt butter in a large skillet and cook onion thoroughly, about 5 minutes. Stir in cabbage and chives. Mix well. Add potatoes and mix again.
Season with salt and pepper.

Turn into a buttered pie plate.

Spinkle with cheese and bake in a hot at 450°F for 10 minutes, or brown under the broiler.
