Zest of one lemon (be sure you always zest the lemon before slicing to juice)
Juice of one lemon (for ease of juicing, microwave for 15 seconds before slicing to squeeze)
3 Tablespoons of butter
1-2 lb. fresh white asparagus (4 to 5 per person is plenty, it is a side) and expensive
1/2 cup sweeter soft white wine like Riesling
3 tablespoons of finely sliced chives

3 tablespoons flat sliced Parmesan cheese

½ teaspoon turmeric

Salt & Pepper to taste

Cut about one inch off the end of the bottom, save for soup or discard. Using a potato peeler skin each stalk carefully, they are fragile. Rinse and place asparagus in large heavy flat pan with the wine, lemon zest and lemon juice. Let steam for 8 to 20 minutes depending on the size around as they vary. Once tender add the butter and simmer for 3to 5 more minutes to evaporate some of the liquid. Then sprinkle the turmeric over the top and stir. Transfer to your serving platter and sprinkle with the Parmesan cheese and the chives and serve.
