Georgia Peach Salsa

A sweet and spicy salsa made from fresh Georgia peaches and garden grown jalapeño peppers that is great on anything from nacho chips to tacos to crackers.

Ingredients

2 cups peaches - diced 1/4 cups sweet red onion - chopped 3 Tablespoons lime juice 2-3 Tablespoons finely chopped and seeded fresh jalapeño peppers 1 red pepper - chopped (optional) 1 tablespoon chopped fresh cilantro 2 tablespoons white vinegar 2 tablespoons honey 1 clove garlic, minced 1/2 - 1 teaspoons cumin 1/4 -1/2 teaspoon cayenne 1/2 cup fresh green onions, chopped fine

Instructions

Mix ingredients and allow to macerate for at least 24 hours. Store in the refrigerator in a tightly sealed jar. Adjust seasonings to taste.
