One year I had an abundance of plum tomatoes so I came up with a fresh taste I liked.
* 6 plum tomatoes diced fine
* 2 large onions diced fine
* 1/2 cup fresh cilantro chopped
* 2 to 3 jalapenos finely chopped
* 1 T. chopped garlic
* 1 lemon
* 1 T. olive oil
* sugar to taste
* 1 T. cumin
* salt & pepper to taste
* 2 mangoes finely chopped
