Avocado Fairfax

A wonderful mix of sweet and sour dressing with the creamy texture of the avocado flesh.


4 to 6 servings


½ cup each of white sugar, red wine vinegar, water and ketchup. Crisp fried thick bacon. 2 to 4 ripe avocados

Combine all ingredients in a sauce pan and bring to a boil stirring occasionally. Boil until a very thick sauce is made stirring from time to time. Halve and peel a ripe Haas avocado and set it in a bowl of young Boston lettuce. Fill hollow where pit was with sauce and sprinkle with crumbled bacon.
