Curry Tuna Melt

Tuna sandwiches are a great lunch or midday snack for athletes. However, it can get pretty boring after a while. I like to mix things up with this Indian-inspired recipe that boasts a lot more flavor than typical tuna salad. The extra toppings, melted cheese, and grilled bread also give this dish a wonderful crunchy, melty texture that's way better than a few saltine crackers.


• 4 slices whole wheat bread
• 4 slices swiss cheese
• ½ heirloom tomato, sliced
• ½ cup baby spinach, washed
• 1 TSP butter
• 5 oz. albacore tuna, drained
• ¼ cup Greek yogurt
• ¼ cup dijon mustard
• ¼ cup sweet relish
• ½ stalk celery, chopped
• ¼ cup dried cranberries
• ⅓ teaspoon turmeric
• ¼ teaspoon curry powder
• salt and pepper to taste
• ¼ teaspoon lemon juice

1. Preheat grill or griddle to medium-low, lightly butter
2. Butter both sides of bread slices, place on griddle for 30 seconds per side
3. In a medium bowl, mix together tuna, Greek yogurt, mustard, seasonings, and lemon juice
4. Add relish, celery, onions, and cranberries; mix until combined
5. Spread tuna on two slices of bread
6. Cover with half of spinach, cheese, and tomato slices
7. Add top piece of bread and return sandwiches to grill/griddle for an additional 30 seconds per side or heat in sandwich press for 1 minute
