This is the best Macaroni & Cheese dish I have ever eaten and it is always a big hit at gatherings. In fact my husband and children ask for it all the time! One tasty variation is to add chunks of ham or sausage to it, then all you need is a vegetable and you have a whole meal!
1 package (8oz) elbow macaroni
2-3 cups grated sharp cheddar cheese (can use mild)
¼ cup butter
¼ cup all-purpose flour
2 cups milk (I use skim)
1 teaspoon salt
⅛ teaspoon pepper
(I usually double the sauce recipe-this makes it better in my opinion)

Preheat oven to 375 degrees F.
Cook macaroni per package directions and drain.
In 1½ quart shallow baking dish (13X9X2) lay down ½ of the macaroni in a layer, top with 1½-2 cups cheese then rest of macaroni. - Set aside
Sauce: prepare sauce by melting butter in medium saucepan; remove from heat.
Blend in flour.
Gradually stir in milk until flour is dissolved.
Add salt & pepper.
Return to heat and bring to boil stirring constantly. Boil one minute (sauce should be thick but runny enough to pour).
Pour sauce over macaroni and cheese.
Top with remaining cheese.
Bake 15-20 minutes or until cheese on top is melted.
Let sit 2-3 minutes and then serve.
