Pumpkin Muffins




15 oz can pumpkin
1 teaspoon ginger
1 teaspoon cinnamon
¼ teaspoon ground cloves
1 cup brown sugar
½ cup vegetable oil
2 eggs, beaten
2 cup flour
2 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 cup mini chocolate chips

Preheat oven to 425 degrees. Line muffin pans with liners or coat with cooking spray. Bring pumpkin, ginger, cinnamon and cloves to a simmer in a medium saucepan. Stir occasionally until thickens, about 5 minutes. Cool in mixing bowl for 3 minutes. Mix in brown sugar, oil and eggs. Add the flour, baking powder, baking soda and salt into pumpkin mixture. Mix until just combined. Stir in chocolate chips. Divide the batter between 16 muffin cups. Cook for 13 minutes or until golden brown.
