Pressure Cooker Beefy Rice

An easy "one pot" meal, perhaps serve with a side salad. My new husband loved it and we were both happy with the easy clean up.

Ingredients

1 Tbsp olive oil 1 onion chopped 1 clove garlic minced 1 lb ground beef 2 carrots sliced 1 green pepper chopped 1 can Cream of Mushroom soup 1 Tbsp Worcestershire 2 cups beef stock 1 cup brown rice 1 cup shredded cheddar

Instructions

Add olive oil to pressure cooker (I used my Cuisinart 6QT Electric Pressure Cooker) and heat to “sauté.” Add onions and garlic, cook for a few minutes. Add beef and cook until browned. Add remaining ingredients except cheese. Lock lid on pressure cooker and cook for 10 minutes on high pressure. When ten minutes have passed, unplug and allow 10 minutes natural release followed by quick release. If rice isn’t done, turn to simmer and cook a few minutes longer. Stir in cheese and serve.
