Tropical Vanilla Custard

Fantastic for Breakfast, dessert or snack
My son developed an auto-immune disease when he was very small with little desire to eat. I developed this custard for him to enjoy for breakfast - easy to prepare, easy to eat, and extremely tasty. He often requested it for every meal!"


1-1/2 c. cold rice milk
1/2 c. cold pineapple juice
1-3 oz pkg instant vanilla pudding mix (4-serving size)
1/2 banana, cubed
1/2 c. diced peaches, drained (canned in natural juice, not syrup)


Prepare pudding mix per package directions using the cold rice milk and pineapple juice. Blend well. Allow to sit 5-10 minutes to thicken. Gently stir in banana chunks and diced peaches.
