Super Bowl Lentil Soup! Vegan

A delicious soup to make on a cold winter day for watching the Super Bowl!




-4 cups vegetable broth -2 cups water -2 carrots -1 white onion -1 portobello mushroom -1 potato -1 cup of lentils -2 stalks celery -½ cup of crushed or fire roasted tomatoes -⅓ slice of field roast -½ tablespoon oregano -½ tsbp parsley -1 tablespoon cayenne pepper -salt and pepper to taste -3 tablespoon olive oil

-chop the white onion, carrots and celery -saute the onions, carrots, mushrooms and celery in a 2 quart saucepan with the olive oil until the onions are clear - add the vegetable broth, water, potatoes, lentils and seasonings - bring to a boil and then reduce to a simmer for 35-40 minutes - add the field roast before serving
