As a mama and Health coach, my goal is to make healthy, nutrient-dense foods that are TASTY for my whole family. Sine my kids LOVE bacon, this is a great way to get my kids to eat brussel sprouts that are full of nutrients to fuel their active lifestyle. The dressing is clean and gives you a mouthful of flavor. This is a great side dish to bring to a potluck, or have with any healthy protein. Hope you enjoy!
1 cup chopped nitrate free bacon (low sodium if possible)
2 cups chopped Brussel Sprouts
4 green onions chopped
2 large carrots
⅓ cup dried cranberries
½ cup chopped almonds
½ cup plain Greek yogurt
¼ cup light mayo or Vegenaise
¼ cup apple cider vinegar
¼ teaspoon garlic powder
¼ teaspoon sea salt

First, cook bacon according to package directions, chop and put aside. Next, chop Brussel Sprouts, green onions, and almonds. Next, shred carrot. Another option is to put those ingredients in your Ninja and blend well till everything is diced into small pieces. Once everything is chopped, put all ingredients in a bowl, including bacon and dried cranberries.
For the dressing, put all ingredients in blender and mix well, or mix by hand. Drizzle dressing over salad and mix well with tongs or a large spoon. Chill for at least an hour before serving. Because this salad has firm Brussel Sprouts, it will last up to a couple of days. Just pour dressing sparingly if you plan on saving it to avoid too much liquid.
