This was a typical Saturday night family supper for my Family when I was growing up. when ever I make it now I am brought back to being a child helping out in the Kitchen my Mom passed away 11 years ago and this recipe always reminds me of Her....
2 large Eggs
1 cup Unbleached Flour. sifted,
1 cup Milk
¼ cup of cold water
Salt & Pepper
1 lbs Good Quality Pork Sausages of your choosing sage/Breakfast style not Italian spiced...
2 tablespoon Lard or Dripping or Cooking Oil
1 large onion, sliced
your Favorite Onion or Mushroom gravy

On a low heat cook the Sausages and Onions in a 12" Cast iron frying pan on all sides until nicely browned Do not prick the skins! while this is happening
Preheat oven to 425f
Crack open the eggs into a Blender Add the milk and water together, mixing it all together really well. Set aside.
Season the flour with a sprinkling of salt & pepper. and add to the blender contents you should have a stiff but smooth batter with no lumps. Allow to rest for half an hour.
Pour in the Batter mixture over the cooked sausages and Onions.
Place into the oven and bake for around half an hour until the batter is puffed up, golden brown and crispy. Serve cut into squares with fluffy mashed potatoes and a delicious gravy of your own choosing.
