Ingredients
1 cup Aunt Jemima Buttermilk complete pancake mix
½ cup water
½ teaspoon vanilla
1 tablespoon powder sugar to add to mix
1 tablespoon powder sugar to sprinkle on top after frying
1 cup coconut oil
1 cup canola oil

Instructions
Mix pancake mix, water, vanilla and 1 tablespoon powder sugar in a bowl.
In small pan, heat up coconut and canola oil till hot, about 320 degree.
Using a small spoon, scoop up small amounts and drop into hot oil to fry. Constantly
stir balls slowly to brown on all sides, about 1 to 2 minutes. Remove from oil and drain on paper towels. When cooled, sprinkle powder sugar on top or serve plain with syrup for dipping.
