Tortellini in red pepper-garlic herb sauce

Tortellini are made to taste better with red pepper-garlic-herb sauce. It is creamy and smooth without the addition of too much cheese.




one 12 oz. tortellini 1 table spoon olive oil and 1 teaspoon unsalted butter 1 red bell pepper 2 cloves of garlic Salt and pepper to taste Fresh herbs (2-3 twigs of basil, 2-3 twigs or flat leaf parsley) For sauce: 1 table spoon all-purpose flour, ½ cup milk, ¼ teaspoon salt, ¼ teaspoon black pepper, ¼ cup low-fat mozzarella cheese

1. Cook tortellini according to package directions. Drain reserving about ¼ cup of pasta liquid and set aside. 2. Cut pepper into small cubes. Chop up garlic into small pieces. Mince herbs. In a small pan, heat up olive oil with butter. Add peppers and cook stirring for 8-10 minutes until they become tender and caramelize. Add garlic and stir briefly. Deglaze the pan with reserved pasta water and stir. Add chopped herbs, season with salt and pepper and cook for about 2 more minutes. 3. To make a sauce: whisk together flour, milk, salt and pepper and add it to the pan. Cook for 1 minute, stirring, then add cheese and stir to melt it into the mixture. Toss pasta with the pepper sauce mixture. Mix thoroughly to combine all the flavors and serve.
