Stuffed Zucchini

Seasoned ground veal, grated zucchini and tomato sauce fill hollowed out zucchini shells

Ingredients

3 large zucchini 1 lb ground veal 1 8 oz can tomato sauce ¾ cup fresh grated parmesan cheese 2 teaspoon Garlic powder ½ teaspoon fresh ground black pepper ½ Tbsp fresh oregano, diced 1 teaspoon fresh basil, diced (if using dry herbs, half the amount)

Instructions

Cut zucchini in half. Use a grapefruit knife to hollow out each half. Grate the zucchini in Cuisinart food processor. Empty bowl. Put blade in and add all ingredients (except zucchini shells)- process. Fill shells. Bake at 350 for 35 minutes. Mixture also good when browned in pan and served over pasta.
