Sausage and Rice Casserole

This is the dish that my mother in law always took to large gatherings. It always went over well, and is fairly easy to prepare.




2 pounds sausage 1 green pepper chopped 1 onion, chopped 3 cups celery, chopped 1 cup rice 4 ½ cups water 2 packages chicken noodle soup mix ½ teaspoon salt ¼ cup butter or margarine, melted

Brown sausage and drain well. Add pepper, celery, salt and onion to cooked and drained sausage and simmer till vegetables are tender. While sausage is cooking bring water to boil and add rice, salt, and soup mix. Cover and cook for 20 minutes. Combine the rice with the sausage mixture and place in prepared baking dish. Drizzle with melted butter. Bake at 375 for 20-25 minutes.
