Butter baking dish and place fillets, skin side down
Coat fillets with topping, top and sides, trying to completely coat the salmon except the bottom
Spread seasoned bread crumbs on over this mixture evenly to help form a thin crust.
Break Bleu Cheese into small pieces and press into bread crumbs at various spots on the fillets,
Bake at 350 Degrees for 15 to 20 minutes and under the broiler for 2 to 3 minutes. Do not overcook. Test your fillets by pushing down on the fillet with the blunt end of a butter knife. The texture should have a little bounce to it, not to firm or soft.
