Whenever we have a big cook out or party at our house, we know BBQ is the # 1 item on our menu but this jambalaya always turns heads and gets new fans from our men in the military! Its light enough to make you body crave for more but filling enough to not want anything else. Enjoy! From our family to yours!
Makes 3 casserole dishes : 8-10 servings each
3 large onions, chopped
3 large green peppers, chopped
3 celery ribs, chopped
12 garlic cloves, minced
1 ½ cups butter
3 pounds fully cooked smoked sausage, cut into ½ inch slices
9 cups chicken broth
6 cups long grain rice
3 cups chopped fresh tomatoes
1 ½ cups chopped green onions
½ cup minced fresh parsley
3 T Worcestershire sauce
3 T hot pepper sauce
3 T browning sauce, optional
1 T salt
1 T pepper

In a large skillet, sauté the onions, green peppers, celery and garlic in butter until crisp-tender.
Place in a very large bowl, stir in the remaining ingredients.
Boil chicken broth in a pot until there is a light boil (this helps the rice raise in the oven)
Transfer to three greased shallow 3-qt baking dishes.
Cover with tin foil and bake at 425 degrees for 50-60 minutes or until rice is tender, stirring twice.
