½ Large onion cut into thin slices

½ red bell pepper cut into thin slices

2 jalapenos cut in half and seeded

½ teaspoon cumin

½ teaspoon chili powder

1 teaspoon oregano

1½ teaspoons ground coriander

1 teaspoon of your favorite hot sauce

1 four cup container of beef stock

½ cup canned tomato sauce

1 large beef roast cut into four pieces

Salt and Pepper

Rub salt and pepper into beef roast.

In heavy frying pan brown each piece of roast on all sides.

When well browned place in pressure cooker.

Add all remaining ingredients secure lid. Cook on normal for 70 minutes.

When pressure has been released remove meat to a platter and pull apart with two forks. return to broth.

Use in your favorite Mexican dish. Tacos flying saucer Etc.
