This is a light in calorie lobster salad made with fresh lobster steamed in Old Bay Seasoning and served on a fresh baguette. The combination of colors of the orange flesh lobster and red onion and green scallions on the white base is outstanding.
¼ C non-fat plain Greek Yogurt
2 T mayonnaise
1 stalk celery chopped
1 T chopped scallion
½ C red onion chopped fine
1 T fresh lemon juice
1 t grated lemon rind
½ t dill
1 pound steamed lobster cut into small chunks (about 2 1/1 C)
Salt and freshly ground pepper to taste
1 french bread baguette
1 T Extra-virgin olive oil

In a bowl, stir together the yogurt, mayo, celery, scallion, dill, lemon juice and rind. Fold in the lobster meat and season to taste with S&P. Chill. Just prior to serving, cut the baguette open and brush inside with olive oil. Heat the bread in oven at 450 degrees, cut side up until bread starts to perfume the air. Fill the bread with lobster mixture, add lettuce and tomato and serve immediately.
