Italian Rotini Bake

This is a quick easy meal loaded with flavor. Just add a salad and hot bread to make a satisfying meal.




3 c. dry rotini pasta 1lb. Italian sausage 1 tblsp. olive oil 1 c. chopped onion pinch of salt/pepper 1(10oz) pkg frozen chopped spinach,thawed 1(14.5oz) can Italian style diced tomatoes 1(8oz) tub chive & onion cream cheese ½ c. ricotta cheese 1½ c. shredded mozzarella cheese

Cook pasta according to package Brown sausage, remove to paper towel to drain; saute onions in same skillet adding olive oil, if needed; add pinch of salt and pepper. Squeeze moisture out of spinach and press between paper towels to remove any excess. Combine ALL ingredients EXCEPT the mozzarella cheese. Mix thoroughly and spoon into a 9X13 baking dish that has been sprayed with oil. Top with mozzarella cheese. Cover casserole and bake 30 minutes in a pre-heated 375 degree oven. Remove cover and bake 15 minutes longer or until bubbly and brown on top.
