Easy yet elegant chicken rolls, stuffed with spinach and feta cheese filling, topped with hollandaise sauce. Yum!
1 box of frozen chopped spinach, thawed and squeezed dry
2 tablespoon olive oil
1 teaspoon McCormack Greek Seasoning
4 oz feta cheese, drained and crumbled
1 egg, beaten
4 boneless, skinless chicken breasts, pounded thin
Knorr Hollandaise sauce, prepared according to package directions

Preheat oven to 350 degrees. In a large skillet, heat olive oil over medium high heat.
Add the spinach and the Greek Seasoning and sauté till heated through.
Add the feta cheese and remove from heat
Toss the spinach cheese mixture with the beaten egg till combined.
Divide this mixture between the four chicken breast and roll each up
Place seam side down in a lightly greased 13x9 casserole dish.
Pour the hollandaise sauce over the chicken and bake in the preheated oven for 35 to 40 minutes.
Sprinkle each chicken roll with some paprika.
