6 chicken breast 1 cup fine toasted bread crumbs (not Italian) 1 cup parmesan cheese 1 cup fat free half and half ¼ cup smart balance, melted 1 tbs. crushed pepper 1 tbs. lemon juice (substitute 1 ½ tablespoon lemon pepper seasoning) 1 tbs. chopped parsley fresh grated parmesan cheese

Rinse chicken pat dry with paper towel. Flatten chicken breast. Combine bread crumbs and parmesan cheese in a bowl (I do not use fresh parmesan). Melt smart balance and mix parsley, lemon juice (or lemon pepper seasoning), and pepper together. Dip chicken in ½ & ½ and coat with bread crumb parmesan cheese. Place chicken in pan sprayed with olive oil. Pour the melted smart balance. Grate some fresh Parmesan Cheese on top just before baking. bake 350 for 45 mins.
