Incredibly delicious! Extremely moist chicken with soft mushrooms and golden brown cheese melted on top. Takes minutes to prep and is out of the oven in 45 minutes.
-6 boneless, skinless chicken breasts cut into bite size pieces.
-2 eggs beaten
-a couple of dashes of hot sauce (optional)
- 1 cup if Italian bread crumbs.
-Oil to brown chicken.
-1 T of butter
-1 lb. of mushrooms (button or baby bellas) sliced.
-1 lb. of sliced muenster cheese.
-1 cup of chicken broth or 2 chicken bouillion cubes dissolved in one Cup of water.

-Preheat oven to 350
-Take 2 beaten eggs and add a couple of dashes of hot sauce (optional).
-Place bite size pieces of chicken onto a large plate and coat with egg mixture.
-Let chicken marinate in egg for 1-2 hours.
-Take bread crumbs and place in a bowl.
-Coat chicken in bread crumbs and cook in oiled pan until browned on each side.(Do not cook all the way through)
-Melt 1 T of butter in the bottom of a 9*12 casserole dish.
-Add browned chicken
-Cover with sliced mushrooms and then top with Muenster cheese.
-Pour chicken broth over cheese
-Cover with foil
-Bake at 350 for 45 minutes.
