Easy Chicken and Mushroom Bake

Incredibly delicious! Extremely moist chicken with soft mushrooms and golden brown cheese melted on top. Takes minutes to prep and is out of the oven in 45 minutes.




-6 boneless, skinless chicken breasts cut into bite size pieces. -2 eggs beaten -a couple of dashes of hot sauce (optional) - 1 cup if Italian bread crumbs. -Oil to brown chicken. -1 T of butter -1 lb. of mushrooms (button or baby bellas) sliced. -1 lb. of sliced muenster cheese. -1 cup of chicken broth or 2 chicken bouillion cubes dissolved in one Cup of water.

-Preheat oven to 350 -Take 2 beaten eggs and add a couple of dashes of hot sauce (optional). -Place bite size pieces of chicken onto a large plate and coat with egg mixture. -Let chicken marinate in egg for 1-2 hours. -Take bread crumbs and place in a bowl. -Coat chicken in bread crumbs and cook in oiled pan until browned on each side.(Do not cook all the way through) -Melt 1 T of butter in the bottom of a 9*12 casserole dish. -Add browned chicken -Cover with sliced mushrooms and then top with Muenster cheese. -Pour chicken broth over cheese -Cover with foil -Bake at 350 for 45 minutes.
