Beef Tenderloin Roast

A cut of meat fit for royalty!


12 filets or more depending on size you like


1 7 lb Beef Tenderloin (trimmed of all fat) Marinade: 1 T soy sauce 1 T brown sugar ½ C Italian Dressing ¼ C Lemon Juice

Place prepared tenderloin in a 13x9 baking pan or bottom of broiler pan. (You may want to line pan w/foil for quick clean-up) Combine marinade ingredients and pour over tenderloin. Marinate in refrigerator for several hours, turning over. When ready to cook, turn oven to broil. Place pan w/tenderloin and marinade in oven on bottom shelf. Broil 20 minutes on each side - (DO NOT COVER FOR THIS BROILING-it's messy but worth it) After 20 minutes, now cover and bake at 350 degrees for 15 minutes. Simply elegant For added flavor, you can add strips of raw bacon over roast before you broil/bake. If you don't want to use the marinade, rub top of tenderloin with minced garlic and black pepper and if you like, again the bacon strips. You can always put meat thermometer into center of roast to ensure that meat is cooked to your liking i.e. rare, pink, well-done, etc...
