This is a simple and delicious, healthy weeknight meal. Turkey spiced with smokey chipotle really gives the tostadas a wow factor.


2 tablespoons olive oil
1 medium onion, chopped
1 pound ground turkey
1 tbsp chipotle pepper in adobo, minced
2 tablespoons chili powder
1 1/2 tablespoons minced garlic
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 can organic refried black beans
8 corn tostada shells
1 1/2 cups Mexican blend shredded cheese
1 cup roma tomatoes, chopped
2 cups romaine lettuce, chopped
1 avocado, peeled, pitted and chopped

Heat skillet over medium-high heat, add the olive oil, chipotle pepper and the onion, cook, stirring, for 2 minutes. Add the turkey, chili powder, garlic, cumin, and salt, cook, stirring and breaking up the meat as it browns, for 8 minutes or until no longer pink.

Heat organic refried black beans in a microwave safe dish in the microwave until warm throughout.

Spread warm beans onto each tostada shell, top with chipotle turkey and garnish as desired with cheese, lettuce, tomato, and avocado.

Serve immediately and enjoy!
