A Classic with a twist
6 chicken thighs with most visible fat removed.
Olive oil for pan
3 red sweet peppers
1 green pepper
4-5 large mushrooms sliced
1 large onion sliced
2-3 cloves garlic
1/2 cup red wine
3 cups spaghetti sauce or diced tomatoes with juice
1 can small peas or frozen peas
Noodles or fettuccine
1/4 c. butter
1/2 c. cream
1/4 c. grated Parmesan cheese
Brown chicken thighs in olive oil without crowding pan. Pan should be large skillet with lid.
Remove chicken, add peppers and onions and saute until soft. add garlic cook 1 minute, add back chicken, and pour sauce over all. Add peas. Cook for about 45 minutes over low heat.
Meanwhile prepare noodles per package directions. Drain. Add parmesan cheese,butter and cream or half and half. Stir until cheese is melted and noodles are well coated. Top with fresh parsley if desired. Serve with Chicken Cacciatore.
