Pork tenderloin (1 pkg, 2 pieces)
3/4 cup Red plum preserves (or pick your favorite)
2 tbls butter
3/4 cup chopped onion
1/2 cup chile sauce
1/4 cup soy sauce
2 Tbls lemon juice
2 tspn prepared mustard
3 drops hot sauce
garlic and onion salt to taste
Saute onions in butter until translucent. Add all other ingredients (except tenderloin), cook to a low boil. Should by syrupy.
Grill meat over indirect heat after lightly searing the outside. Baste meat (over indirect heat) with sauce. Sauce won't burn because of indirect heat. To cook over direct heat, in 15-30 minutes, baste the meat, but turn it constantly, and be careful not to burn the sauce. Do not overcook. Serve any extra sauce on the side.
