This is a traditional Sicilian dish that is served in nearly every household on Xmas in my husbands hometown in Sicily. Nello is a baker, so he makes his own bread dough, but this is just as good (almost:)
Nello’s Sicilian Empanadas
1 Pkg Frozen bread dough (3 loafs)
flour for rolling
9 Italian sausage links
1 Onion sliced
3 Med-Lg Potatoes quartered and sliced
1 pkg frozen spinach
1 pkg frozen broccoli
1 pkg frozen cauliflower
¼ c parmesan
¼ c mozzarella
Olive oil
Salt & Pepper to taste
Thaw the dough. Cut each loaf in half. Knead and form each into a ball let rise according to package directions. In the meantime, Cook the frozen Vegetables until tender but firm. Set aside. Cook the sausage and set aside. Fry the potatoes and onions in small amt of olive oil, salt and pepper to taste. Slice sausages and add to potatoes.
When dough has risen to double its size roll 1 out to a 6” circle. Place on a lightly oiled cookie sheet so that the center is toward the edge of the cookie sheet. Do the same on the opposite edge of the cookie sheet. Each 2 Empanadas will have a different filling.
#1. Layer Spinach, 1/3 of potato mixture, s&p to taste
#2. Layer Broccoli, 1/3 of potato mixture, s&p to taste #3. Layer Cauliflower, 1/3 of potato mixture, cheeses, When you have finished your layers fold the dough over the mixture to make a half circle, dampen and pinch the edges. This will look like 2 giant turnovers. Poke the top with a fork (I usually poke the letter of the vegetable so I know what is in it).
It is best to cook these 1 at a time for even browning. Bake at 375 degrees for 25-30 min or until light brown. Cover with towels until ready to serve. To serve cut each one in half to make 2 servings each.
