This one-pot meal is tasty and satisfying.

½ teaspoon olive oil
1  garlic clove, crushed
1  celery stalk, fi nely diced
1  precooked chorizo link, about 3
    ounces, fi nely diced
1  can (14.5 ounces) diced tomatoes
8  ounces clam juice
1  cup water
1  medium new potato, fi nely diced
½ pound cod
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper

1. Put the olive oil, garlic, celery and chorizo
into a 2-quart, microwave-safe casserole dish
with lid. Microwave, uncovered on High (PL10)
for 5 minutes. Add the diced tomatoes, clam
juice, water and potatoes. Cover and cook for 20
minutes on High (PL10) so that the potatoes are
