Simple Sesame Cilantro Lime Chicken Marinade
INGREDIENTS
Ingredients:
4 medium chicken breasts
½ cilantro
Juice from 2 limes
3 garlic cloves diced
¼ tsp powdered ginger
2 Tbs. Rice vinegar
1 Tbs. honey
Pinch of red pepper flakes
2 Tbs. sesame oil for cooking
Instructions
Directions:
Put all marinade ingredients in a bowl and whisk well with a fork. Next, put chicken breasts in a gallon sized plastic bag or glass baking dish. Pour marinade overtop and refrigerate for at least one hour.

Then, in a frying pan, put sesame oil and turn heat to medium. Put chicken breasts and remaining marinade in the pan and cook for 6-7 minutes on each side (depending on how thick the chicken is). Use spoon to scoop marinade over chicken throughout cooking. Make sure chicken is thoroughly covered and cook in marinade to soak up the flavor. Serve with sprouted rice or brown rice on the side.

Recipe Tidbit:
For extra nutrients and a way to flavor up the rice, try this idea. After you cook the sprouted rice, shred ½ cup zucchini. Use a paper towel to soak up moisture in the zucchini, then add it to the warm rice. Sprinkle in 1 tsp garlic powder, ½ tsp sea salt and stir well. This adds nutrition and a bit of flavor to your plain ‘ol rice. This is an example of sneaking some extra greens in your kids’ food and hopefully they won’t even notice, except how tasty their dinner is!

Sesame oil is an oil I like to use in a few different recipes, bringing in the Asian flavor. It can be used in easy stir-fries instead of olive oil. Sprinkle some garlic powder and sea salt, and serve over brown rice, and you have yourself an Asian Chicken Veggie Rice bowl! Cook over low to medium, heat with this oil and remember to store in the refrigerator and use it in multiple recipes because it can expire. You can find sesame oil at Trader Joe’s, Sprouts and grocery stores.
