The Mexican style spicy salsa, along with the rich taste of salmon makes this a perfect dinner. It is easy to make, plus it’s a low calorie food for those on a lower diet.


1-1.5 lbs salmon filets (the skin and bones need to be removed, cut into 4 equal pieces)
1 table spoon of chopped fresh mint
1 table spoon of chopped fresh cilantro
1 table spoon of minced fresh or finely chopped roasted garlic
1 table spoon of minced fresh ginger
1 medium fresh tomato and cut into quarters
2 table spoons of extra virgin olive oil (the better the quality the better taste you get)
3-4 table spoon of fresh lemon juice
white pepper and salt to taste

Mix together mint, cilantro, garlic, ginger, tomato, olive oil, and 2-3 table spoon of fresh lemon juice, salt, and pepper in a bowl. Set it aside.
Preheat a 10-12 inch pan over medium high heat for about 2-4 minutes (time is different depending on your oven). Rub salmon with the left over fresh lemon juice and add a little salt and white pepper. Place salmon in the pan. Cook for 5 minutes. Turn and cook for another 5 minutes. Add salsa and serve topped with mint salsa.
*Make sure that you do not cook salmon for more then 15 minutes, as it will be overcooked.
