Very Lemony Lemon Bars

These lemon bars are for REAL lemon lovers!! The flaky crust melts in your mouth and the lemon topping has a zing which will make your mouth water. You can't just have one!! Bars are best after being in the refrigerator or freezer!

Crust: 4 C Flour 1 C Powdered Sugar 1 lb + 4tbs (4 ½ sticks) unsalted butter cut into ½ inch cubes and chilled Filling: 3 C Granulated Sugar ¼ C Flour ½ teaspoon Baking Powder 7 large eggs, lightly beaten Grated zest and juice of 4 lemons (I used about 6 or 7 lemons) ¼ C Powdered Sugar Note: you could also add 1 C blueberries if you want lemon blueberry

Baking Crust: Preheat oven to 350 degrees. Lightly grease 17 x 12 x 1 pan. Mix flour and sugar in food processor and pulse 2-3 times to blend. Add cubed butter and pulse until mixture is a coarse mean and begins to stick together. Remove and form into a big ball. Flatten dough with floured hands and press evenly into bottom about 1.4 inch up the sides of the pan. Bake 12-15 minutes until light brown but not quite done. Let Cool. Filling: Mix sugar, flour, baking powder in bowl and set aside. Mix eggs, lemon zest and juice –wick until smooth and well blended. Sift the flour/sugar mixture into egg mixture and stir until well-blended. Pour filling on top of crust (sprinkle even with blueberries if using). Bake 30-35 min. at 350 degrees until set. Cool for several hours before cutting. Dust with powdered sugar and cut into bars.
