Sweet Potato Conserve

The best sweet potatoes ever! Even sweet potato haters like this.




1- 40 oz. can sweet potatoes, drained & mashed 1 & ½ sticks butter, melted 1 egg ½ cup white sugar ½ teaspoon. ground cinnamon 1 cup crushed round buttery crackers 1 cup loose-packed light brown sugar ½ cup chopped pecans 1 teaspoon. vanilla extract

Mix the sweet potatoes, ½ stick melted butter, egg, white sugar, and cinnamon; spread in bottom of baking dish sprayed with cooking spray. Mix the crushed crackers, brown sugar, pecans, remaining 1 stick melted butter, and vanilla. Sprinkle over top of sweet potatoes. Bake in oven pre-heated to 350 degrees for 30 minutes, or until bubbly around edges.
